The "showboating" comment was most definitely meant to refer to the MIG he inverted against. That particular move is what made Maverick famous/notorious in class that day. Remember he and Goose had to correct Charlie and then tell their story about the incident, to which the other guys playfully call it bullshit. The scene in question was right after that.
I don't think he was truly interested in "helping Sarah." That was his marquee case. When hearing Reese in 1984, he was already wanting to build a career off of the situation. Of course he was going to say whatever to keep her there.

With all the new evidence brought to light, it's likely he would be able to appeal for a new trial. The crimes committed on his escape would certainly carry a lot lesser charges that perhaps he may be let off depending on the trial. Especially with the testimony of Gerard on his side, the very agent who he pointed the gun at.
Yeah I'm not refuting you at all, everything you bring up is correct.
It's just my perspective that we know he is innocent. But I have no further evidence or argument for or against that.
