I'm a huge Miyazaki fan, as well, but I tend to watch his films with the dubs, so I'm not really counting them here, but if they count, then I would certainly put a few on my list (Spirited Away, notably).

That list was in no particular order, either.

I need to see "Das Boot" and "Three Colours".. I keep hearing about them, but my response is usually, "That will be so long to finish!"

Very long and very worthwhile, yes, so I'll pile on with the rest and recommend them each heartily. The length isn't as much of a problem here, either, because Das Boot's longest cut is designed as a miniseries, and the Three Colours films are a trilogy. So there are logical breaks or "intermissions" you can use without killing the plot momentum (I dislike stopping films halfway through since it kinda kills the "urgency" of the narrative). So, while they are long in-total, they also can be divided up to when you have time for them.

Yes, I never stop a movie and always look at length so I can plan it out.

What cut of "Das Boot" would you recommend?

I first saw the longest one, the full-blown miniseries version, and I like it a lot. I haven't seen them all, I don't think, but with the full-length you get more of a sense of what life would be like on the submarine living as one of these people, so I'd go with the, uh...full immersion.
