He gets broken in half, his neck gets twisted backwards, he blows himself to pieces ...
Yet he lives.
At some point, you lose the suspense needed to maintain interest.

I know what you mean. That's what I didn't like about part 2. In the first movie we all kind of assumed that if his head got chopped off he would die.
shareIf he could slice his entire hand off and grow it back by doing nothing except wait, then being able to grow his hypothetically chopped off head back should be no problem. It’d probably just take longer. Makes sense, right? :}
Or maybe it’s his head that would grow a whole new body! Point is, his regenerative healing factor works in wondrous ways (in short, he’s indestructible). Blame his creators :P
There needs to be a point where they tell the audience what he's not immune to. Superman had his kryptonite. We all knew it. Two Deadpool movies have already been released and there's no sense of danger the audience feels for him. He can never lose.

If his head gets cut off, why doesn't his body grow a new head and his head grow a new body?
If his arm gets cut off, why doesn't his body grow a new arm and his arm grow a new body?
He's not a superhero he's a parody of one.
So, his powers are too much on purpose.
