To answer the question in the title:
IMDd ratings are quite accurate for the most part, you just need to know how to read them! He is how I read them:
8+: Brilliant movie
7.X: Good movie
6.X: Solid movie
5.X: Don't expect much
below 5 or lower: Trash
Add about 0.5 for comedies and substract about 0.5 for dramas. Then subtract or add about 0.2 for each thing you are biased against, so if you hate Keanu Reeves, subtract 0.2. And then adjust for your preferences in genre, shifting one category when the rating is between categories.
And be aware that if you are a buff in a particular category, you can still find gems in the 5.x slot
So, applying this to John Wick, it's a 7.2, which means it starts out as a "great" movie but since you seem to not like action movies (because you complained about the lack of a deeper story, something action movies aren't known for), that makes it a solid movie, which John Wick is, because no matter how dull or ridiculous you may think it is, you have to admit that the action was done well.
