Just watched the movie and was thinking the same thing. I think if Stuckey hadn't ended up quitting himself, then Edward eventually would have let him go in the not-so-distant future. It's heavily implied Edward and Vivian were forming a new relationship, and I doubt Stuckey would fit into the picture very well. In addition to being the lawyer, they were also friends. The assault on Vivian would change the whole friendship dynamic. It all comes down to how much Edward values the friendship and Vivian's willingness to forgive. I don't think Stuckey would have quit, either. He still would want to keep his job as long as money can be made. He would probably try to apologize and get back to business
