In the beginning of the movie America and and Other Strange are being chased by a demon that sorta looks like a distorted octopus, but not exactly like the octopus that shows up on Earth when our/main Strange saves her from the octopus. Were those two different monsters? Did the monster simply look different in our universe than in the one it came from?
Why suddenly a second completely different demon then? She's actively getting chased by one, goes through the portal, and when she ends up here on Earth, another 2nd demon pops up?
Because she was sending multiple demons after America. I believe it is actually mentioned once or twice. That would be a common trope; the villain sends multiple assassins after the target to be assured one of them succeeds.

Doesn't matter how many demons she sends after AC, the demon cannot be instantly in the new Universe, as soon as she got here. Just doesn't make sense.
And btw, if those monsters could jump from universe to universe so easily why not just get that power from one of the monsters???
I don't think the implication is that it appeared in response to her arriving. The implication I got is that it was already there, searching; as numerous other demons were searching other realms. When she arrived it detected her and came after her.

I can't recall, but an offhand comment from wanda or strange when they met in the garden...I thought the implication was that Wanda had basically sent a multitude of a demons to get America. Like in those movies where a target suddenly gets attacked by random mercenaries from scene to scene.
I guess the weird thing is that we never see the octopus again, but at that point, we never see any more demons, once Wanda is explicitly on the attack.
The timing of it is what throws me off. She's being chased by the one in another dimension, comes through a portal, and immediately is being chased by the 2nd one. There was no break, which is what made me think it was the same one. Then it looked different...but both had tentacles. It definitely threw me for a loop.
Two more questions: 1) If the universes made the demons look different, why did the humans look exactly the same? 2) Why was the demon initially invisible when it first arrived on our earth until strange revealed it with magic?

Why not? A monster/creature who is invisible until something acts upon it is a common trope. An early (and undoubtedly not the first) would be the Id monster in Forbidden Planet.

Well, it was invisible at first, for starters. Something about the environment, gravity, or something else that affects it. Think Superman and yellow sun, or a lizard that changes its colors.
I don't think it was the same creature anymore, the timing just threw me off.
At first I thought it was different but now I'm convinced its the same. For the same reason: the timing is too perfect for that not to be a continuity of the same chase.
