They were in a relationship. How much needs to be spelled out? The way she handled things was deft and tough - qualities Mickey would definitely love in a woman. The way she handled the shop? That's why he loves that woman. She doesn't take flak, she gives it. She's a cockney, so he relates to her lower-class/outsider status. She stands up to him, but also supports him - as he does for her. What's not to get?
Yeah, she was a smaller role. But the movie was jam-packed with plotting and characters as it was. Maybe they had to leave some of her stuff on the cutting room floor to make way for pacing.
