We all know the episode where Kathy tells Elliot he is the dad after Eli is born, because he had his doubts.

For lack of a better word, the 1st 5 Stabler kids are kind of dumpy, and here come Eli almost modelesque.

I honestly lost track of Stabler’s kids except for the bipolar daughter who once got arrested for DUI

Eli is Elliot's son. Kathy confirmed this in the season nine episode where she gave birth. And there are only 5 Stabler kids:

Maureen
Kathleen (bi polar)
Dickie & Elizabeth the twins
