So in the huge battles to come, when the Unsullied fall in battle, are they going to make more Unsullied or once they are gone they are gone?

There won't be any more Unsullied. Daenerys abolished the system that produced them. Other slave cities in the east may make copycat Unsullied, but they won't be the equal of the real thing.

They are the ultimate one hit wonders. A bit like an old religious sect in the US known as Shakers that didn't believe in sex... as one might expect a group like that doesn't last.
