Why do they keep calling ERIC a prince?

If MELODY is the princess, then he has to be king, right?

Nope. Eric is a successor to the throne, so he's still a prince. Look at it this way: Queen Elizabeth was coronated while her son, Prince Charles was a child. Prince Charles is next in line to the throne, but Queen Elizabeth is still alive and reigning. Prince Charles and Princess Diana had two sons, William and Harry. Charles has yet to ascend the throne, so he is still Prince Charles while his sons are titled Prince William and Prince Harry.

Except Prince William is now a Duke.

I think only Morgana ever called him "Prince Eric", so she could have been mocking him. Or the writers may have just made a mistake.

He is probably the head of a principality and thus not a king.
