he could have used the force to grab his lightsaber into his other hand and cut palpatine's head off.

It wouldn't have worked cause Palpatine had unlimited power. Plus wouldn't Palpatine just point one lightning hand at the lightsaber and his other lightning hand at Mace's balls? Couldn't block both.
