Hard to say. The films Lee made up until The Crow were entertaining, but were very much action genre films of their time.
I think unlike a lot of Lee's peers at the time in that genre, Lee had a physique, appearance and ability that could have translated into other types of films. I could see Lee as a lead in a romance genre film whereas I couldn't say the same of Steven Segal, Jean Claude Van Damme, Dolf Lundgren or those types of muscle-bound action stars.
Some say he was pegged to possibly play the Keanu Reeves role in the Matrix. Now, had that come to pass, that might have opened up other opportunities for him...or it might have pigeonholed him or stereotyped him as 'the Matrix guy' forever (because Lee didn't have the same amount of different roles in diverse genres that Reeves did by the time he was in The Matrix). Lee was still trying to establish himself in the industry when he died. Others have said Lee had already signed on the make Rapid Fire 2 before he died. The movie industry likes actors to do what they do best. I can't honestly say Lee would have been given opportunities to do many high-budget things outside of the action genre had he lived, and making sequels to films like Rapid Fire wasn't really a way to demonstrate diversity.
His career would have lasted as long as he was bankable. I don't know if Lee would have ever been a huge star. It seems like his career was on the way to becoming bigger...I mean, he might have made The Matrix movies and then his career could have stalled. Who knows?
