Completely aware I'm over thinking this. However...

I wonder how "sampling" would actually work. When the security guard walked on T1000, it was the shoe that was actually sampled. This particular shoe could have been attached to anyone. But then it seems that he is "observing" the security card as he takes his shape... but if that's true, why does he need physical contact in the first place?

Assuming the T1000 must touch a living creature to assume it's appearance, maybe it penetrated the shoe to sample the guard's DNA. It was stated by the T800 that T1000 can take on the form of stabbing objects. It obviously duplicates clothing by appearance because it did it several times in the movie.
