Was Tony really in love with Elvira?
Or did he just see her as a status symbol? What I mean is that if he landed the boss' woman (especially, a white woman) then in his words, he could go straight to the top. I mean, other than that, I don't understand why he would want her as a wife besides looking like Michelle Pfeiffer.
Quite frankly, I wouldn't want my woman to act like a stuck up, ice queen who smokes, drinks, and snorts coke all day. Plus, Elvira would call Tony disparaging racial slurs (calling him something that rhymes with "lick" and begins with the letters "s" and "p") to his face and say that her deceased boyfriend, Frank had better manners than him ("Frank never talked so much about money!"). Maybe the fact that Elvira played "hard to get" is what made her even more attractive to Tony.
