Pretty hard to pick just 1 & not anything from All Things Must Pass, but my gut choice would be Wah-Wah.
Really need to refamilarize myself with his catalog as all I have is All Things...., Material World, Cloud 9, & his final one (Brainwashed). Not really familiar with his mid-period stuff &/or haven't heard it in years.
