What was the last meal you cooked yourself?


I mean actually took ingredients and made something, rather than just getting something from the freezer and heating up.

I've just made a veggie bake consisting of ;
sweet potato
Leek
Red onion
Green pepper
Carrots
Spinach
Cauly and broccoli mix.
Mixed herbs, salt and pepper, a few knobs of butter and a drizzle of olive oil.
Covered and baked for 40 mins.
Uncovered then topped with mozzarella and tomatoes and baked again for 20 mins. (At this point I'd usually beat a few eggs and tip it over and put back in to bake, but i have none today).
Served with a dinner roll.

I'm stuffed, it was great.

Last night's meal was curried beef, olive oil, onion, garlic, carrot, broccoli, cauliflower, green beans, red capsicum, brown rice and a small tin of Heinz baked beans in tomato sauce. All cooked in the one saucepan.

That's all very well but what happens if the cook checks out before you do ?

Roast Chicken is the only thing I cook these days. Everything else is takeout.

At least you're honest. Heck, if I make myself an egg sandwich I feel like I've accomplished something. And at one time a healthy meal was a can of Progresso Lentil Soup and a box of frozen spinach (not chopped).

I'm just not a good cook, and its a big mess. I have the money to get takeout so why not.

I hear ya. When I had the money, I felt I was having enough variety in my diet (no french fries, sub cole slaw or salad, but they end up being very small portions) and I thought I was doing pretty good. But probably not as healthy as is optimal, and not getting the hang of using fresh ingredients to make something unique and to be proud of makes me wish I had tried harder.
But I'm the same way, I like the convenience and the lack of hassle with clean-up, etc.

We grew up on casseroles here. A few that come to mind are shepherds pie, American chop suey, and tuna noodle casserole.

Today for lunch I cooked a foil wrapped snapper with spaghetti squash and dinner was a cheap steak (top round) with kabocha squash.

and I'm kind of obsessed with it. Have been using it regularly to air fry chips (incidentally no better way to cook chips - so crispy!) and last night did my first roast chicken in it, which came out pretty good too.

Giving it a rest tonight though and making a shepherd's pie with fresh green beans and button squash.

I cooked lemon chicken with sauce to have on top of brown rice for dinner. For dessert lemon blueberry bread with glaze for mom and dad.

I don't cook any more. I just get take out from local restaurants. Tomorrow I'm going to get a burrito!
