I used to love his films but he started grinding out poorly made schlock like Escape from LA, Ghosts of Mars, etc. Hoffa's son wasn't aware of the plan to kill his dad - they briefly referred to him as a useful idiot or something similar in the film. They needed people Hoffa trusted in the car tio convince him to get in. They always intended to kill Hoffa in the house - this is why there was a brief shot of the guy putting down temporary flooring (similar to putting plastic down on a rug). Hoffa's son had gone to pick up a fish - it really has no significance to the story (perhaps an allegory about Hoffa going to "sleep with the fishes" or about to be treated like a dead fish).
