There was absolutely no good reason to blow up the workshop.

It is something Heisenburg would do though.

Because that dude was the guy who constructed the rail he was attached to - makes sense he'd want to blow up the entire place. It could also be seen as a bit metaphorical, destroying/moving beyond his past as a meth slave.

He's already a wanted criminal moving away with a new identity so who cares about evidence or no evidence in this particular case.
