In Enterprise (less than 100 yrs before Discovery), you have Vulcans and others as slaves of the Terrans. T'Pol gets radicalized by the logs on the Defiant and starts a revolt. In DS9 (over 100 years after Discovery), you have some humans, Trills, etc. who hold special roles among the Cardassian/Klingon/Bajoran Alliance (which overthrew the Terran Empire at some point) even though most of their kind are allied with the now scattered humans in rebellion. (Roles are reversed and it's an Alliance rather than a singular Empire, but in effect it's pretty much the same thing that was going on before, except with humans as slaves now.) It's never said specifically when the Terran Empire was established, but some say it's implied in ENT that there was already a Terran Empire in their world by the 20th or 21st century, somehow. I'm not a fan of the ENT mirror episodes, so I'm not eager to re-watch and see.

I don't recall if it's said how Sarek met Amanda. On TNG, he was already with Perrin and that's the ep I remember best. Might be pertinent to go back and rewatch the TOS episode Sarek first appeared in. Or if you want, there are wiki pages for Sarek you could check.
