How come Dr. Choi was so upset with the MMA coach? I know his fighter referred to the other fighter as a "towel head" and the coach referred to the their opponent as bastards. The problematic coach also bowed to Dr. Choi in a disrespectful manner. Dr. Choi at one point says in response to Dr. Clarke saying that the problematic MMA Coach and his fighter are just being tough guys, "It goes deeper. There are not a lot of families with the last name Choi where I'm from."

I think you answered your own question. The MMA Guy and his brother were just racist and it ticked Dr. Choi off

Oh come on, you'd have a point if they painted all white guys to be racists on that show but having some be racist is just reflecting real life.
