I was just watching the first show of the new season. This guy made a lemon cupcake with chocolate frosting. Duff Goldman insisted the two flavors don't go together. He's a fool! I've been making lemon cakes/cupcakes with chocolate frosting FOREVER. Everyone likes them. How can he be an expert baker when he doesn't know what flavors complement each other?
Yes, they do! I lost some respect for him when he said that. Funny thing is I made chocolate cupcakes today for a friend's baby shower. I used lemon frosting on half and raspberry on the other half.
I have a bakery, so I get all kinds of combos. I used to think lemon & chocolate didn't go together(I do love orange/chocolate). But I have more than my fair share of requests for that combo, along with lime/chocolate. Still don't like that combo, but it's my personal tastes. I do think for a competition, the judges should have a wider taste-bud. But I see that on most food comps.
I also like orange and chocolate. For some reason I'm not a fan of lime by itself but if you make lemon/lime, I'm in. Go figure.
You're right about food comps. I remember watching one comp where the judges didn't know you could use evaporated milk to make cornbread or something. I use it a lot because neither my husband nor I are milk drinkers and it always spoils before we use it. I ALWAYS have evaporated milk in my house and use it for any recipe that calls for milk. I use half evaporated milk and half water. Haven't had a problem yet.
