Why did the mom getting infected matter?

Early in the movie we see the woman with the baby getting attacked in the car. The blood on the baby belongs to the mother, who has been bitten.

I assumed this is when the virus was still infectious since the soldiers 'turned' about 5 minutes prior.

Cut to flashbacks later in the movie, and the mom is alive and well, only to THEN be killed by one of the zombies.

What am I missing?

"Well...I've seen enough. Come on Charlie, we're going home."

I think it was just a fake-out to make the viewer think she died then and not from what really happened. Plot twist.

Wasn't mom missing an arm later in the film?

Yes. There was one long shot where the portion of the arm was wrapped in black and not visible. It looked like a stump.

They chopped off the arm. When she and patrick went out scavving he got drunk and she got killed.
