As we have now had the final chapter, I reckon carrying the games on would quite frankly ruin it.
I do however believe they could make a prequel to the series quite easily, showing us Kramer's past, his diagnosis of cancer and meeting Jill. How he coped with her pregnancy and the loss of the baby.
Learn about how he came to meet William with the whole life insurance thing.
There's lots they could do with his past, but I don't think there's much they could do in continuation unless they started having copycats.
Everything that could've been done in a prequel was pretty much covered in the flashbacks throughout the sequels. Not to mention the actors are all much older now.
I thought of an idea for a Saw 0 after the Saw wiki site pointed out a continuity error in the franchise after Saw 5. See, Saw 5 said that Hoffman kills his sister's killer and made it look like a Jigsaw killing, afterwords Jigsaw recruited him who helped him capture the victims of Saw 1. But there's a problem there, if Hoffman helped Jigsaw with the killings in Saw 1, that means that the only victim prior to Hoffman's first kill was Cecil. How could Hoffman had known that Jigsaw would become a serial killer after one kill?
So I thought, it would be an interesting story, to tell about Jigsaw's victims prior to the first, prior to Cecil and Hoffman's kill. Plus, Saw 7 said there were other Jigsaw victims we didn't know about, such as the ones above the fan blades or Joan, the girl who inspired Bobby to make up his story.
So my story would tell about that. Like, we'd see Hoffman pissed off about his sister's death, investigating the first Jigsaw killings, and stuff like that, let's even bring back Tapp.
Anyway, that's what I would do for a Saw 0.
P.S. What would also be an interesting short story, maybe a comic book or something, would be telling what Gordon have done behind the scenes of the Saw movies and him working with Jigsaw. Maybe there could be an idea where Gordon demands that Jigsaw let Adam go, but Amanda already killed him before they could.
saw7 also showed several people with pig masks along gordon. it's more obvious that whoever makes this movie will be more concerned with explaining that rather than a plot hole most people didn't notice

Why are you assuming Jigsaw had only killed one person before the bathroom trap? There was the fat guy (Paul?) who cut his wrists in the razor wire trap, Amanda's trap, and the naked guy smeared in flammable substance with the candle (Mark) at least. And there had to be multiple before the bathroom trap, since Gordon knew that Jigsaw was a serial killer. Cecil was definitely not Jigsaw's only trap before the bathroom.

Saw 4 probably covered up most of John's life events before he turned into Jigsaw.
We already know his first victim ( Cecil ), his first trap and so on. No need to make a Saw zero.
Either a sequel ( set after Saw 3D ) or a reboot or a movie set between Saw 2 and Saw 3/4 ( 6 months between these movies ). So, they can focus on a lot of stuff if they want.
I think we've done enough exploration of John Kramer's past already. The only way I want to see him return is to show more of how he interacted with his various apprentices. Especially Gordon.
However, I always thought a spin-off movie about Amanda Young would be interesting. It'd probably have to be for the VOD/Direct-to-Video market because I don't think Amanda is quite as pop-culturally-relevant as the overall series, so I doubt a theatrical film would be successful... But we know Shawnee Smith had worked a lot on the character, and she was one of the best pieces of the series. I'd be interested to see a sort-of drama/thriller that delved slightly into her backstory, and maybe explored her time with Jigsaw a bit more before her downfall. It's really a shame that we only saw a little of it between Saw II and Saw III.
