Sow... As in, a pig.

A sow is a female pig. "Pig" is a derogatory term for the police, therefore the demons were insulting her as a female police officer.

The girl calling on the phone said she was near a pig farm, sow is a term for pig.

Interesting to note that some police departments, notably the NYPD use "MOS" as abbreviation for "member of the service" (as in a police officer).

I doubt that the writers were aware of this, but it is interesting.
