Did she not know the consequences of breaking the rules? She was stupid enough to take on John Wick and almost die, then after he spares her she decides to kill someone for one gold coin just so she can get away and have another crack at John. At lhe very least she should have just knocked the guy out dos he could get away. Do they not explain that if you kill an assassin at this assassins hideout you get assassinated. It was the part of the film that bothered me the most.

She was offered twice the bounty if she broke the rules.

That and she probably thought she could get away with it if she was successful - if she had managed to kill him she could have covered up her involvement.

the part that makes the worse sense is she then goes back to meet with "the management" where they kill her. Why the hell would she just go back there? She knew she broke the rules.
