It took Buck and Jen hours to turn, yet it took mere minutes for the redneck.

And Mary as well, and it seems like she was infected through Jen's spit.

In a bad movie, these things never make sense and always occur for the convenience of the plot - so naturally a parody will do the same.

The hunter died from his injuries as did the neighbors and presumably the bear you hear getting attacked outside. Perhaps dying accelerates the transformation. As for Mary we don't know when or how she was infected.
