When Jessica sees the demon (or whatever) and starts driving crazy, why doesn't Malorie see it, and also go fruitcake city?

Recall that she was reaching into the back seat at that moment to answer Jessica's cell phone. So she was spared that vision.

Yes good point, but she had to look forward when she was trying to control the car.

Maybe it had already moved away from her line of sight. Kind of hard to make guesses on this, since the thing is invisible.

Malorie was reaching for Jessica's phone, and by the time she looked up, the entity passed by.
