Why didn't Hemingway just crack open Fontaine's safe after the accident and take whatever money was in there? Or did I miss something?

Fontaine would not have given Dom everything he had. There was a suggestion that Dom was listening to the safe, and that he was going to come back. Even if there was nothing in the safe, they could have looted the villa. But this would have destroyed the plot.
