It happened to Miguel twice, why not the third time?

He was cursed and went to the land of the dead. He came back because he was blessed by a family member but when he took the dead's guitar again, poof, he went back to the land of the dead.

Well, when he came back for good, the first thing he did was grab that guitar again. Was there a stated reason as to why taking a dead person's belonging didn't curse him?

The first time Miguel returned to the land of the living, it was under the condition he give up music.

When he broke his word and grabbed the guitar, he returned to the land of the dead.

When he returns to the land of the living the second time, no such condition has been placed upon him, so touching the guitar means nothing.

Wasn't it because the sun had come up and Day of the Dead was over?

That could be another reason, yes.
But it was mostly that Imelda had reconciled with Hector and stopped putting conditions on Miguel's return.
