The 12 course menu...
The gluten free, meat free, sugar free, TASTE FREE guest seriously has issues. You can't give narrow parameters and expect a feast. I think Ben did ah awesome job

Looked like only the Primary guest wanted that meal. That was very selfish of him as host to order all that food.

Yeah, what did she expect? Ben did a great job.
shareThey should have started the dinner way earlier. That vegan chick was a pain in the arse, then had the audacity to complain and change her mind about what she would eat. Ben did an admirable job. All of those guests seem like jerks to me anyway, an unlikeable bunch.
shareI agree, they were a bunch of low class jerks. That was extremely obnoxious to order a 12 course tasting menu on a boat with a tiny kitchen and ONE chef - and for the woman who ate nothing - what did she expect?? She was the most obnoxious of all. Ben should have served her ice cubes as one of her courses. I think Ben did an amazing job trying to please everyone.
shareBen is terrific. I can't imagine how he managed that 12 course meal.
The girls don't seem to work out so well as his helpers. Sierra is a big baby and just doesn't seem cut out to be a yachtie.
Ben did an amazing job. I was so impressed with the menu. Every course was just perfect. I knew Ben was a good chef, but I didn't realize he was that good. That meal was truly outstanding.
shareI agree with all of you. Ben did a fantastic job. One side note, all of the course's for the "special guest" could been pre made before the 12 course meal. So he could have worked on the 12 course meal with no stress of the special meal for the one guest.
shareI totally agree. Basically, the special guest eats a very restricted diet with an occasional piece of fish. Sierra was in charge of only two of her courses, and the fussy eater felt cheated by not being included in the 12 courses. That was Ben's mistake. No way did Sierra have the knowledge or experience to figure out an alternative 12 course menu for the fussy eater. That was Ben's job.
shareThat salad could've been served up as at least 8 courses. Each ingredient put on a tiny plate:
Course 1 - sliced heirloom tomatoes served with a Toulousain vinagerette
Course 2 - halved celery stalks with a Thai peanut sauce
Course 3 - quinoa sprinkled over a bed of spinach leaves
Course 4 - carrotte rappee (IDK, had this at French cafe once. Basically just shredded carrots with herbs and a mustard vingarette)
... you get the picture
Reminds me of the Japanese restaurant episode of Odd Mom Out. If you haven't seen that show, at least check out that one episode.

Very nice! I love your suggestions! So much of that could be prepared in advance. I know it was a lot of work for Ben, and I was stressed just watching it. But, Ben is very talented and he could have handled it. He put too much pressure on Sierra.
I did see that episode of Odd Mom Out. I love that show!
ANY 12-course tasting should begin much earlier since food (especially delicious, beautifully-prepared food) should be savored and enjoyed over the evening, not wolfed down in an hour or two. One thing this series highlights is that there's an etiquette for the staff, BUT also an etiquette for the guests. Both break down from time to time. However, the service staff job is 100x harder because emotions and challenges must be submerged regardless WHEREAS the demands, eccentricities, nastiness, ugliness, ill-manners, etc. of (some) foul guests must be catered to. Too bad. It's a tough business.
Maybe the staff (at times) needs Martha Stewart to whip them in line up to epic standards of service at all times AND with a smile and loving it; AND the really ugly, obnoxious guests need Ray Donovan to kick their butts when they abuse the service staff.
Ray and Martha - the ultimate fixers.
She pissed me off lol. I would've wanted to remind her that with her dietary restrictions there is nothing on the 12 course meal she could eat.
