Perhaps she feared the infection might spread to her hands?
Her hand looked zombified...or it's just one of the extreme ways to stop it.

shareI watched her visit to Vern again. When he asks why she did it, she says, "What good is a finger when you're going to lose your arm?" (It was on the arm that had been bitten.) He assures her that she'll keep her arm.
All I can figure is that she was (justifiably) angry at the world, and took it out on herself.
Why would she feel the need to cut off the finger, but not her arm?

shareThat scene was handled with sensitivity and compassion rather than the bloody gory horror that we normally see in other movies. The director was brilliant. This film was a refreshing new look on zombie films.

The fact that it was mangled and broken but didn't hurt her was an indication her infection was progressing, and she didn't want any kind of visual representation of that. Not so much for anyone else, but for herself.
