So which version of 'Blade Runner' do I watch before this?

Watch the Theatrical/International version and THEN The Final Cut. Although personally I think The Director's Cut is perhaps the best version.

I first saw the 'international' cut with the voice over and no unicorn and loved it...
But now I prefer the 'Final Cut'...with the following caveats:
I still think of Deckard as a human, ignore the unicorn implication and of course prefer the '...more life f#%#er' line than 'father'

I seem to have seen about a half dozen different versions of this film and I still come back to the original theatrical release.
It's not perfect; the last thirty seconds or could have been dropped but, on the other hand, the noir voice-over more than makes up for it.
Your view may be different but this is my opinion.
Watch the director's cut with no voiceover or happy ending where you get to see the Deckard and Rachel in a car driving to a lush forestland.
Dimwits that don't like to think like the voiceover version. Those that think and want a meaningful experience like the director's cut version.
