If you have the DVDs, watch the extras... the creators stated they went to great lengths to try and mirror the manner of speech of the time.
Obviously no one has recordings of what was truly said, and everyone knows that a writer has the time and desire to "clean up" what is written so that it flows and sounds more grandiose than it perhaps was when actually said... so it may be nothing more than pure speculation on the show's part.
However, they believe that the product they put forth is a fair and accurate representation of the structure and syntax of middle Roman Empire nobles and commons.
Why doesn't George R.R. Martin use Twitter? Because he killed all 140 characters!
