The Waiter

What was up with that scene where he takes his co-worker out to dinner? They seemed to really focus on the waiter character and how inept he was at his job, being very intrusive, asking too many questions, giving too many recommendations, awkwardly opening and pouring the wine...there's no way this was an accident. Was there a point to it, or just random?!

Let me try. Just remember it's my (unprofessional) interpretation completely
I can think of few possible answer:

1. It's tough movie so maybe they want to light the movie a little.

2. Maybe the waiter symbolic Brandon himself. It's clear that Brandon feel uncomfortable with the situation (a real date). The waiter and Brandon as something in common: They both play a role that is unnatural to them. They both struggle, embarrassed and maybe even a little scared (watch the waiter he look little anxious). The waiter is some kind of a mirror to the scene date itself and in general to Brandon life.
