On Sunday night's episode with the Game of Thrones cast, what was that opening sequence a parody of? The one where he checked into a hotel room and became an old man and interacted with the bellboy? Who was he supposed to be?

I havent seen it yet but saw a picture, I think it is a parody of Melisandre from GOT

You're right. Apparently that scene is from season six, which I haven't watched yet. Spoilers don't usually affect my enjoyment. It was a funny bit even before I knew what it was about, even funnier now.
