I don't think it's that simple. The overall writing has gotten poorer, but the overall level of gore really hasn't changed all that much. Right now instead of walkers being the threat, humans are, so when there's violence, it tends to be more "efficient," shall we say, and not so messy. And it's not like they have a quota or something. Depending on what's happening on screen, some scenes and episodes might have more, some scenes/eps might have less. This was never really a consistent episode-to-episode thing.
What has been consistent about this show from the beginning though is that it has always, always been focused primarily on what's happening with the characters before zombie gross-outs and other typical tropes of most other zombie-related franchises. That's why a large proportion of TWD fans are NOT fans of other zombie franchises. The real problem is that their original selling point-- writing and characters-- haven't been developing very well (with some exceptions) since at least last season, and just about everybody is getting bored with how stale it's becoming.
Have you played the games btw? I'm sure they're more oriented toward folks who aren't so invested in characters and moral conflict and just want to see guts spill.
