What in the hell is cornpone?? Lol


When Celia Foot tells Minnie she only knew how to cook grits and cornpone. (I hope I'm spelling it right!)

It's cornbread-like, but cornpone has no sugar, milk or eggs in it. It's basically cornmeal, bacon grease, and milk, with some baking powder thrown in to make it rise a little (if you have some). It was widely eaten during the Civil War since it could be made wiht basic ingredients and cooked over a campfire.

Bacon grease was a basic ingredient?? Idk how to get bacon grease unless I cook bacon and save the grease. My, how things change...

Most people in days gone by had a metal container they kept on or near the stove to pour the grease into after they fried bacon. They kept it to use when cooking other foods. Not healthy, of course. My mom had one when I was a kid and she used to use some of the bacon grease when "frying down" fresh green beans from the garden. Probably why my dad eventually had to have 5 heart bypasses, but did they ever taste good.

I"m southern and there are plenty who still do this including my mother inlaw. I don't but as I learn to cook more southern I just might.
