With that amount of spillage and food dump because it wasn't cooked the right way you could feed Africa's children x3 times over (all fine dining combined).

shareI wonder if this is prevalent in the food industry as a whole or just relegated to fine dining in general. The part I am specifically talking about is when they're creating new dishes, they do all the cooking and if it doesn't look right, chuck the whole thing into the compost.
shareI assume only for high end places when they’re doing Research and Development for a dish. They could at least keep some of those things for employees to eat though lol
