I hope Carmen & Claire rekindle

Since she's a good listener and they really both love each other very much, she should at least hear him out. If I were in that situation, I would ask if she were willing to wait a year or two so I could get the new place up n' running, established, and in working order. The point is to get that Michelin star within a year to get some profits rolling in so that Uncle Jimmy can start getting his paid dues in.

After the place is running efficiently with full focus on the restaurant, I would assign a chef de cuisine (head chef) to run the place but retain executive chef/co-owner position (Joel McHale). Richie is already good at running expo/expeditor/food runner and everyone more or less pulled through so by year one, everyone would have been experienced with less hesitance, less mistakes, and less stutter.

Even with all this stuff above, I would still be sms/texting along with maybe Facetime one a week or two to keep tabs but not hanging out or dating, like a temporary semi-distance relationship. We could be just talking about our jobs or maybe sending artistic nudes or whatnot from time to time.

After the year or two and everything is all hunky dory, I can leave the rest to the well-established work force team and start pursing that full relationship with lots of banging and hanging to make up for lost time. Basically I will become Gordon Ramsay.
