Buddy cuts corners


I was recently talking to someone who lives in Hoboken and he was mentioning how a good friend of his works for Buddy. Apparently he is very nice, but he totally cuts corners when making cakes. He will buy supplies from other bakeries as oppose to making it himself, and he'll sometimes buy pre-made icing and fondant. Apparently the quality of the products made has greatly suffered since he became famous. Carlo's is not the same bakery it used to be.

its kind of like what i said about the special cakes being made mostly of ricee krispies instead of putting in extra work to make it more cake.

he must read this board, because he made a point of saying that the Statue of Liberty cake (the statue itself, at least) was going to be all cake that he carved

the cakes are not mostly rice krispies. Usually the base of the cake is cake; then, certain things that have to be carved are going to be the cereal because you can't make everything out of cake. What they simply do not have time to air on the show is the conversation with the client about how many people there will be, the possibility that there will be a portion of the cake that is not cake, and that there will be sheet cakes made or something to make sure that there is enough cake for all. It is not about "putting in extra work". It is about making a dessert that the client wants in the best way possible.

Since the beginning of the show, Buddy has always bought pre-made fondant from Satin Ice; you see buckets of it all the time. Honestly, I don't blame him because whether homemade or pre-made, fondant is just sugar; not very tasty any which way you spin it.

I couldn't tell about the icing though because the icing was usually in unlabeled buckets, which I assumed they made from scratch and filled the buckets with.
