Gigi's Cupcakes

Geez. This lady is really seeing how much help her business needs. Every place she visits has some serious issues. Usually, this show doesn't show so many of the mistakes the locations make.

In regards to the "12 scoops of powdered sugar" recipe, a true baker measures by weight, not volume. Twelve scoops of powdered sugar can yield wildly different results depending on whether the sugar has settled and packed down or if it's been stirred and aerated. I also don't like her idea of a greeting: "Hi, welcome to Gigi's. Have you visited us before?" Yes, I come in here every day and I find it insulting that you ask me that every time. My face isn't that forgetable, is it?

reply

Haha I thought the same thing about the greeting. I was hoping she has a few different approved greetings.

Nancy there's not the slightest doubt in my mind that if you rolled your way into a cupcake shop that you would be recognized as a repeat customer.

What a perfectly lovely message, Nancy. You learn that in that church you frequent?

1/2 thru the show.. in ref to the powdered sugar variance. my prob wasn't the powdered sugar. My problem was how could that mess of HAIR (Gigi's hair) be allowed in that shop. and this is the BOSS!! her priorities are out of wack. I won't be eating her cupcakes!! Wouldn't care for the hair in it!!

reply

haha I agree-she complains about an apron but its fine to not wear hairnets or gloves.
I couldnt get over how they both were handling the butter with bare hands.

I'm a baker and the first thing we always tell someone new is they either have to wear a cap or a hairnet as soon as they walk behind the counter and they must wash their hands before doing anything else. When it comes to wearing gloves, they only have to wear gloves while handling "ready to eat foods". You can handle raw dough with your bare hands but you can't handle the finished product with your bare hands. In the case with the butter on the show, they should have been wearing gloves since the icing wasn't going to be cooked.

I agree w/you. I honestly wouldn't want to eat cupcakes where people's hands have been w/out wearing gloves. It's just a matter of being sanitary.

Its also a matter of having "Common Sense". Which a lot of people don't have....anymore.
