Because it places a stink on the show's concept and it'll be years before it'll be tried again.
Look at remakes in the movie industry: Rollerball and Flight of the Phoenix were both excellent movies, but someone tried to put their spin on it and failed miserably. It's not that tough to bring up the schedule and see the reboots of both of those movies, but it's difficult to find the originals.
Look at Planet of the Apes. No one says it must treat the original 5 as canon (particularly when you are talking about Beneath and Battle, but to make it a farce like '01, even Marky Mark couldn't rescue it.
Soylent Green will hit a production schedule at any given moment and it will likely suffer from the same fate.
The Pareto Principle will eventually bail out most studios, and TPTB will figure those who don't like reboots/remakes are just being fickle.
