Yes, it's Hollywood. If they had cast a 26 year old actor he would have looked too young to be believable as an engineer.
Why do you think there is such a long lull in between good roles for young male actors? They become too old to play teenagers but they look too young to play men. Very few can keep working steadily through those years. Yes there are exceptions like DiCaprio or Depp but there are plenty that just have to wait it out.
Must be a Hollywood thing because at my job we have plenty of experienced electrical, mechanical and structural engineers in their 20's and some are younger than 26 y.o.

I'm in my early 20's and I have lots of friends in their mid 20's. Pratt does not look mid 20's. He looks his age. Nothing wrong with that.
Sometimes Lawrence looks her age and sometimes she looks older. Depends on the makeup. But she's aged a lot since coming onto the Hollywood scene.
