I'm sure there were earlier films of this genre, but the biggest box office inspiration has got to be "Open Water."
The OP is actually describing "Open Water 2" (where they can't get back on their boat), which had been in development hell UNTIL "Open Water" kicked open the door.
"12 Feet Deep" mentioned below is in the same category, as is Ryan Reynolds's "Buried."
I would NOT however place "Alien" or "Night of the Living Dead" in this genre. The central plot device is being trapped by the setting itself, not being cornered by a hostile force.
As for tying them all together into a shared universe, I can't help thinking about "Cabin in the Woods," which sort of does that with the entire horror film genre.
