It was a thing left over from the first movie. Even the lady on the plane made a comment about nobody would steal it.

That coat was always hideous. But it looked a lot more at home in an Eastern European setting during winter. And maybe it's cause Vin is a lot thicker now, or maybe it's not the same coat, but it just don't fit him like it did the first movie. The joke about it wandering away on its own was pretty funny though.
