Lets recap.

Killing OLD JOE closes the loop, sending YOUNG JOE on a path forward in time without a temporal double mucking things up. Granted, OLD JOE has been allowed to muck things up a good bit before this scene, so the Future Potential is now in flux, e.g. very different than the previous iteration where OLD OLD JOE is killed instantly on arrival.

There is no guarantee that YOUNG JOE lives a quality life in this New Future. In fact, it could be entirely worse for YOUNG JOE. (Although, I admit it could be better.)

Now, what does YOUNG JOE say at the bitter end? "I saw the monster I might become. So I changed it... [gunshot]"

If YOUNG JOE wanted off this rollercoaster ride, and to be absolutely certain he doesn't become a child-killing-monster later in life, then suicide is the only measure of control. Temporally speaking.
