It probably has to do with some kind of moral lesson. The killers usually targeted the teens/young people who smoke, drink, do drugs, or have sex.

Remember the Scream rules?

Seize the moment, 'cause tomorrow you might be dead.

The term "horror" will be pointless if only elders die in a movie. It's like Battle Royalle turning into Red.

I'd watch a horror movie where the kids fall like flies but the crafty old folk who are usually cannon fodder figure out a way to turn the tables on their attackers. It's like that old saying: "Don't get into a fight with an old man, he has nothing to lose and he knows all the dirty tricks you haven't learned yet."

There are old people that die in horror movies, just they are seldom or ever the main core cast. Usually just side characters.
