I can't see any reasonable explanations for him to get that mad. Here's the only possibilities I can see (which I do not find sufficient):
1) He cares about the honor of the family, and he is so offended that his mom would cheat on his dad.
2) He secretly loves Antonio and can't come to terms with him loving someone else.

Ya, I got that. But he really hadn't acted on that throughout any of the movie. If he really loved Antonio wouldn't we have seen something that directly suggests it? All we saw from what the filmmakers gave us, was him having a great relationship with Eva (or at least a genuine sexual relationship).
The intensity of his anger didn't ring true for me either.
But then he lived in a very different world than I.
I wondered whether part of it had to do with his having realized his mother had lied and chosen to spend her time with Antonio rather than to see Edo.
Same here, in that it didn't ring true for me. It doesn't seem to add up with the suggestion by some that Edo was in love with Antonio. The way Antonio is first introduced you think it might go that way. But if there was something between them, it was never expressed or acted on that we saw, and they were certainly alone enough to be able to if they wanted. We do see Edo with a woman. And if he did love Antonio, even if just as a close friend, it doesn't really seem to make sense that he is so upset about the soup. If it meant so much to him, and his relationship with is mother meant so much, then why is he upset if that is shared with Antonio, if Antonio also means so much to him?

When Antonio's character was initially mentioned (during the lunch) and then introduced (at the birthday party), I had a few inklings that Edo might be infatuated with Edo, but, for me, that idea just didn't seem to play out through the rest of the film.
Has anyone listened to the DVD commentaries or read any interviews of the filmmakers in which they said that Edo was in love with Antonio?
I totally agree that the suggested Edo/Antonio love was not shown in what we see in the film, even though it could be implied from how we see them interacting in the first half of the movie.
Edo wanted to hold the family and the company together and continue with traditions, but Emma (Tilda) and Antonio got careless and left him with nothing to hold on to.
At the moment the soup was served, the entire family was split apart. The only one still determined to hold on was the one who chose to maintain her secrecy.

Edo loves Eva but he also loves Antonio. I don't think he realized how much he loved Antonio until he realized his mother was also in love with him. He also knew that Antonio loved his mother and not him. The realization of all this was what shocked him and caused him to lash out.
shareI want to add (on top of these other ideas) that Edo's favorite dish is the Ukha soup, made by his mother. Out of all of Emma's children, Edo is the only one that appreciates her Russian heritage.
Of course Edo is insulted that Emma chooses to share the soup recipe with Antonio -- it's one of special things that define their mother-son relationship. When Edo is served the soup cooked by Antonio, he realizes his mother must have been the one to tell Antonio about it. It's like she's sharing a secret that was only between her and Edo before.
