I think a big reason Audrey's character is so cliche is because it's a cliche situation. He had just gotten out of a long, deeply-committed relationship, and he clearly wasn't ready to start dating again. So instead of really dating a woman and putting himself out there, he ust shacked-up with an air-head. Doing so allowed him to be with someone at a time when he probably didn't want to be alone, and it required no emotional effort nor presented any risk of getting hurt.
The other option would've been to do something similar to The Notebook - where Noah remains emotionally distant from the war widow despite sleeping with her. I don't think that would've worked in this film, though since the time that elapses in the Notebook between the breakup and the reconciliation is far greater than it is in The Five Year Engagement.
