When the waitress brings Thorin his meal, he says "Thank you" so gently and graciously. It's almost as if Thorin isn't gruff because he has yet to be tasked with the daunting, stressful quest.

I think all those years out in the wilderness made him plenty gruff. Especially when you consider the big chip on his shoulder. However, I believe the scene conveyed that he never forgot his manners.
Anyway, I think my favorite scene is the entire finale -- The cat and mouse with the dragon and the dwarves (and hobbit) is very exciting. So many memorable exchanges.

I felt the "Thank you" was a special bit of Richard Armitage himself shining through. That scene provided great context for it.
